Pass the Pasta, Please!

Our last blog post was about all of the wonderful benefits of eating pasta. Hopefully, you read it and came away with a renewed interested in either preparing or ordering this filling, versatile food for your family. You may have read it, however, and wondered, “Which pasta dishes can I fix beyond the standard mac-n-cheese or spaghetti and meatballs?” We’re glad you asked. Today, we are serving up two of our favorite pasta recipes. They have proven to be family favorites consistently through the years, and they are both very simple to prepare. Each recipe can easily be doubled for a crowd, and the leftovers freeze well for future use. So, without further ado, here they are…


Cabbage and Noodles

This is a classic eastern European dish that originated in Hungary but is also popular in Poland, Austria, and Germany. Known in Hungarian as “Kaposzta Halushka,” this satisfying and tasty one-pot meal is the ultimate winter comfort food.

Fry bacon until cooked. Drain grease, leaving a light coating behind in pan. Place bacon in holding bowl. Saute onions in remaining bacon grease until carmelized. Drain and put in bowl with bacon. Save grease. Cook cabbage by boiling in large stockpot until soft and tender. Drain water from pot. Remove cabbage and put in separate holding bowl. Fill pot with water and bring to a boil. Cook noodles according to package directions. Drain water from pot when done. Mix noodles with cabbage, bacon, and onions, stirring well. Stir in a bit of extra bacon grease to the mixture if desired. Add salt and pepper to taste. Enjoy!

Baked Ziti with Peppers and Onions

This casserole dish is the perfect weeknight meal or potluck offering. Melted cheese and flavorful sausage combine to create a winner that your family will ask for again and again!

Heat oven to 375 degrees. Boil water and cook noodles according to package directions. Drain and set aside. In large saucepan, cook sausage, peppers, and onion until meat is browned and vegetables begin to soften. Drain. Return pepper mixture to saucepan. Stir in pasta sauce, 2 TBSP Parmesan cheese, oregano, I cup mozzarella cheese, and ziti noodles. Mix well and spoon into 13 x 9 x 2 inch baking dish. Sprinkle with remaining Parmesan and mozzarella cheese. Bake covered with aluminum foil for 30 minutes or until hot and bubbly.

White Chicken Chili

Melt 2 tablespoons butter in soup pot. Saute scallions, onions, green pepper, garlic, jalapenos, ginger, salt, sage, cumin, and pepper until soft. Remove mixture from pot. In same pot, melt 3 tablespoons butter. Add flour and whisk briskly while adding cream. When thick and smooth, add chicken broth and milk. Stir in corn, beans, chicken, and spice mixture from earlier. Simmer on low for 30 to 45 minutes, stirring often. Serve hot with grated Monterey Jack cheese and sour cream on top and tortilla chips to dip with on the side.

Crockpot Corn Chowder

Nothing beats a crockpot for ease and convenience in getting dinner on the table. Soups and crockpots have proven to be the perfect partners in achieving this goal. Toss these ingredients into yours before work in the morning, and you will come home to amazing aromas and dinner done!

Combine all ingredients in crockpot. Cover and cook on low for 6 hours. Serve with warm bread. Yield: 8 servings.

Calico Bean Soup

This colorful soup is a feast for both the eyes and the palate. Loaded with six different types of beans, which are a terrific source of both fiber and protein, this filling soup packs loads of flavor and comfort into each nourishing bowl.

Add beans to a large stockpot. Cover with hot water and soak overnight. Drain and add 2 quarts of fresh water. Bring to a boil. Reduce heat and simmer, covered, 1 to 2 hours or until beans are almost tender. Stir in tomatoes and seasoning mix. Simmer, uncovered, 1 to 1 ½ hours or until beans are completely cooked. Serve with warm corn muffins. Yield: 6 servings.
